The Bordaleira or Churra Mondegueira breeds are predominantly dairy breeds, with their milk being used for the production of Serra da Estrela cheese (PDO) and Serra da Estrela whey cheese (PDO). However, they have also always been associated with meat production, through their milk lamb, the Serra da Estrela Lamb (PDO).
Since ancient times, this sheep breed has been raised throughout the mountainous region that gives them their name.
Serra da Estrela Lamb (PDO) is an exclusive meat of the Serra da Estrela region, tender and very flavorful.
Preparation Method
In a pot (bottom shelf), place the meat, a little water, and heat it for 8 minutes over low heat, stirring occasionally, or place the meat on a plate/bowl and heat for 4 minutes in the microwave (1st button).
Place the rice on a plate and microwave for 3 minutes (1st button).
In a frying pan (bottom shelf), add a drizzle of olive oil, and add the cabbage, heating over high heat for 2 minutes, stirring occasionally, or place the cabbage on a plate/bowl and heat for 2 minutes in the microwave (1st button).
On a plate, place the rice, the cabbage, and then the meat on top.
Finish by pouring the meat sauce over it.
